01 β€” THE STORY

Behind the plate

Balsamic onions are a useful bridge between sweet and savoury. Their richness suits burgers and grilled meat, but the acidity also lifts cheese, roast vegetables and sandwiches.

The onions are cooked in stages: first soft and translucent, then golden, then glossy with reduced vinegar and brown sugar. Rushing the first stage gives colour without the melting texture this garnish needs.

03 β€” THE METHOD

Cook step by step

  1. 01

Melt the butter in a wide, heavy-duty pot over low heat. Add the sliced onions, thyme and garlic.

  2. 02

Cook slowly, stirring regularly, until the onions are completely translucent and soft without browning.

  3. 03

Increase to medium heat and continue cooking until the onions turn an even golden brown. Scrape the base frequently so the natural sugars do not catch.

  4. 04

Add the balsamic vinegar carefully and simmer until the sharp vapour has softened and most of the free liquid has reduced into the onions.

  5. 05

Add the soft brown sugar and cook gently until the onions are deeply caramelised, glossy and cohesive.

  6. 06

Remove the thyme stems, spread the onions in a shallow container and cool promptly before covering and refrigerating.

04 β€” FROM THE PASS

Chef's notes

  • Use a wide pot: crowding the onions traps steam and makes caramelisation much slower.
  • The vinegar should reduce, not disappear completely; stop when the onions are glossy and spoonable rather than dry.
  • Stir more frequently after the sugar is added because the mixture can scorch quickly.
  • Cool the large batch in shallow containers rather than leaving it in the hot cooking pot.
