Hot-Water Starch Momo Dough

A hot-water wheat-starch and corn-starch dough for tender, delicate momo wrappers with a softly translucent finish.

01 β€” THE STORY

Behind the plate

This is not the usual elastic wheat-flour momo dough. Wheat starch and corn starch create a more delicate wrapper that becomes soft and slightly translucent after steaming, making it especially suited to carefully shaped, gently handled momo.

The technique matters as much as the formula. Freshly boiled water gelatinises the starches, the oil smooths the dough, and keeping every unused piece covered prevents the wrappers from drying and cracking while you work.

03 β€” THE METHOD

Cook step by step

  1. 01

Combine the wheat starch, corn starch and salt in a heatproof mixing bowl. Whisk thoroughly so the two starches are evenly distributed.

  2. 02

Pour in most of the freshly boiled water in a steady stream while stirring firmly with chopsticks or a heatproof spoon. Add the remaining water gradually only as needed; different starch brands absorb water differently.

  3. 03

When the mixture has formed damp clumps and is cool enough to handle safely, bring it together by hand. Add the vegetable oil and knead until the dough is smooth, soft and uniform, with no dry powder remaining.

  4. 04

Cover the dough directly with a clean damp cloth or reusable wrap and rest for 15–20 minutes. Do not leave it exposed.

  5. 05

Roll the dough into a rope and divide it into equal pieces. Keep all pieces covered except the one being shaped. Flatten each piece and roll into a thin round, leaving the centre slightly thicker than the edge.

  6. 06

Fill lightly, pleat and seal without stretching the wrapper aggressively. Place each finished momo under cover on a lightly oiled or lined tray while shaping the rest.

  7. 07

Steam the filled momo promptly over rapidly simmering water until the wrapper looks gently translucent and the chosen filling is cooked safely through.

04 β€” FROM THE PASS

Chef's notes

  • Use truly hot, freshly boiled water. Warm water may not gelatinise the starches sufficiently and can leave the dough crumbly.
  • The recipe supplies 250 ml water, but absorption varies. Hold back a small amount at first and use it only if dry starch remains.
  • This dough has less stretch than ordinary wheat-flour momo dough. Keep it warm, covered and lightly filled to prevent splitting.
  • If the surface begins to crack, knead in a few drops of hot water with lightly oiled hands rather than adding dry starch.
  • β€˜1 spoon’ of oil needs clarification for exact production scaling. Record whether it means a teaspoon or tablespoon when confirmed.
  • Wheat starch is still a wheat-derived ingredient and should not automatically be treated as gluten-free or suitable for people with coeliac disease.
