Master Butter Emulsion: Five Professional Variations
One glossy butter-and-water emulsion becomes five service-ready sauces: sriracha, miso, kombu, chicken and smoky bacon.
01 — THE STORY
Behind the plate
A reliable butter emulsion is one of the most useful foundations on the pass. It has the richness of melted butter, but its smooth, cohesive texture allows it to carry acidity, aromatics and concentrated stocks without turning greasy.
This is a production-scale master recipe designed for a professional kitchen. Make the base first, then take only what you need for service and turn it into one of five distinct finishes—from bright sriracha butter to a deeply savoury bacon emulsion.
03 — THE METHOD
Cook step by step
- 01
Place the water and 3,000 g of the diced butter in a large, heavy-based saucepan. Heat gently, stirring occasionally, until the butter has melted and the liquid is just beginning to simmer.
- 02
Lower the heat. Add the remaining 1,000 g butter gradually while whisking continuously, allowing each addition to emulsify before adding more.
- 03
Blend briefly with a hand blender until completely smooth, cohesive and glossy. Do not allow the emulsion to boil.
- 04
Use immediately over very gentle heat, or cool rapidly in a shallow container and refrigerate. Reheat carefully while whisking; never bring it to a hard simmer.
04 — FIVE FINISHES
Five sauces from one base
Make the master emulsion first, then take only what you need and build each variation gently over low heat.
Sriracha Butter
A bright, spicy finish with mellow confit garlic and two layers of lemon acidity.
Open the individual recipe →Ingredients
- Master butter emulsion, as needed
- 15 g confit garlic
- 20–40 g sriracha, depending on the heat required
- Lemon juice, to taste
- Pickled lemon juice, to taste
- Fine salt, to taste
Method
- 01Warm the required amount of master butter emulsion gently without boiling.
- 02Whisk in the confit garlic, sriracha and a little of both lemon juices.
- 03Whisk firmly or blend with a hand blender until smooth. Taste, then adjust the acidity, heat and salt.
Miso Emulsion
An ivory, umami-rich sauce with white miso, confit garlic and clean citrus lift.
Open the individual recipe →Ingredients
- Master butter emulsion, as needed
- 15 g confit garlic
- 30 g white miso paste
- 5 g lemon juice
- Pickled lemon juice, to taste
- Fine salt, only if needed
Method
- 01Warm the required amount of master butter emulsion gently.
- 02Whisk in the white miso, confit garlic and lemon juice.
- 03Blend until perfectly smooth, then finish with pickled lemon juice. Taste before adding salt because miso is already well seasoned.
Kombu Emulsion
A deeply savoury, sea-scented butter designed for fish, shellfish and roasted vegetables.
Open the individual recipe →Ingredients
- Master butter emulsion, as needed
- 2 g kombu seaweed powder
- 5 g MSG
- 6 g confit garlic
- 10 g lemon juice
- Fine salt, to taste
Method
- 01Warm the required amount of master butter emulsion over gentle heat.
- 02Add the confit garlic, kombu powder, MSG, lemon juice and a small pinch of salt.
- 03Blend with a hand blender until completely smooth. Rest briefly, taste and adjust the salt or lemon juice before serving.
Chicken Emulsion for Market Fish
A glossy, savoury sauce that combines concentrated chicken stock with butter and lemon for a rich fish finish.
Open the individual recipe →Ingredients
- Chicken stock, as needed
- Master butter emulsion, as needed
- 30 g lemon juice
- 15 g pickled lemon juice
- Fine salt, to taste
Method
- 01Pour the chicken stock into a clean saucepan and reduce over medium heat until concentrated and lightly thickened.
- 02Lower the heat and whisk in enough master butter emulsion to create a smooth, spoon-coating sauce.
- 03Add the lemon juice and pickled lemon juice. Season with salt, blend briefly if needed and serve without boiling.
The original formula does not specify the quantities of chicken stock or master emulsion; add both gradually and judge the final balance by flavour and coating consistency.
Bacon Butter Emulsion
The longest variation, built from a smoky roasted bacon stock, reserved bacon fat and the master emulsion.
Open the individual recipe →Ingredients
- 1,000 g smoked bacon trim
- 70 g vegetable oil
- 7 g garlic, chopped
- 200 g white onions, sliced
- 135 g carrot, chopped
- 135 g leeks, washed and chopped
- 100 g mushrooms, sliced
- 20 g fresh thyme
- 165 g dry white wine
- 100 g tomato purée
- 13 g smoked paprika
- 2,000 g water
- 8 ml lemon juice
- Master butter emulsion, as needed
- Fine salt, to taste
Method
- 01Heat a large, heavy pan. Add the vegetable oil and bacon trim, then cook over low heat until the bacon is deeply coloured and its fat has rendered.
- 02Remove and reserve the bacon. Leave the rendered fat in the pan, add the onions and sweat until they begin to caramelise.
- 03Add the garlic, carrot, leeks, mushrooms and thyme. Cook over medium heat until softened and starting to colour.
- 04Stir in the tomato purée and smoked paprika. Cook for 5 minutes, stirring so the purée caramelises without catching.
- 05Add the white wine and reduce by half. Return the bacon to the pan, add the water and simmer gently for 90 minutes.
- 06Strain the stock through a fine sieve, cool it rapidly and refrigerate overnight. The next day, lift off and reserve the set bacon fat.
- 07Reduce the chilled bacon stock until concentrated. Whisk it gradually into warm master butter emulsion, followed by enough reserved bacon fat to deepen the smoky flavour.
- 08Add the lemon juice and salt, then blend until smooth and glossy. Keep warm gently and do not boil.
05 — FROM THE PASS
Chef's notes
- Temperature is the control point: keep the emulsion below a hard simmer at every stage.
- If the sauce begins to split, take it off the heat and blend in a splash of cool water or a few cubes of cold butter.
- Season each variation only after its flavouring ingredients have been incorporated; miso, MSG, stock and bacon all contribute salt.
- For smaller batches, scale every weighed ingredient by the same percentage rather than changing the butter-to-water ratio.
- Cool any sauce for storage rapidly in a shallow, food-safe container and follow your kitchen’s time-and-temperature controls.
AT THE TABLE
How to serve it
Spoon the sriracha or miso butter over roasted vegetables, use kombu emulsion with shellfish, finish market fish with the chicken variation, and pair bacon butter with cabbage, potatoes or grilled meat. The plain master emulsion is also an excellent finishing base for seasonal herbs, citrus and reduced stocks.
