01 — THE STORY

Behind the plate

This is more than blended squash. Cumin, five spice, turmeric and ras el hanout create a layered aromatic base, while golden raisins and Madeira bring sweet fruit and acidity.

The pan is repeatedly scraped and deglazed as the squash cooks, building roasted flavour without allowing the natural sugars to burn. Butter added at the end gives the finished purée a polished restaurant texture.

03 — THE METHOD

Cook step by step

  1. 01

Melt enough butter to coat a heavy-based pan. Add the shallots and garlic and sweat gently until soft.

  2. 02

Add the golden raisins and cook for 5 minutes, stirring so they plump without catching.

  3. 03

Add the cumin, five spice, turmeric and ras el hanout. Cook the spices briefly until fragrant.

  4. 04

Pour in the Madeira and scrape the base thoroughly. Reduce until the liquid has almost completely evaporated.

  5. 05

Add more butter and the diced squash. Cook over medium heat, stirring and scraping the base regularly until the squash is tender and concentrated.

  6. 06

If the pan begins to catch before the squash is cooked, deglaze with only a small splash of chicken stock.

  7. 07

Blend until completely smooth, then mount with additional butter to create a glossy finish. Taste and season as required.

Chef's notes

  • The recipe was submitted twice identically, so only this canonical page is published.
  • Butter and chicken-stock amounts were not supplied. Add both gradually and record the final quantities when standardising.
  • Madeira is given as a weight in the supplied formula; weighing it is acceptable, but record a volume if that is easier for production.
  • Check the five-spice and ras el hanout blends for salt and allergens before final seasoning.
